Ginger, a root widely grown in Asia, adds a spicy kick to many dishes. It’s also known for its medicinal properties. This underground stem (rhizome) can be used fresh, ground, dried, or even as an oil.
Dried ginger, called “Soonth” or “Sunth” in India, is simply fresh ginger that’s been washed, soaked, and dried in the sun. Sometimes it’s bleached with calcium carbonate for a lighter color. Dried ginger is usually ground into a powder for easier storage, lasting over six months.
The spice in ginger comes from three main chemicals: gingerol, shogaol, and zingerone. Fresh ginger contains mostly gingerol, which loses its bite and turns into zingerone when cooked. Dried ginger, with shogaol as its main component, packs the strongest punch.
